ASSORTED COLD NOODLE SALAD 
1 lb. lo mein noodles (or perciatelli or thinner noodles)
1/2 tsp. salt
2 tbsp. sesame oil
1 cucumber
6 thin slices of ham

SAUCE:

2 tbsp. soy sauce
1 tbsp. vinegar
1 tsp. sugar
2-3 tsp. Tabasco Sauce

Cook noodles in boiling water. Rinse with cold water and drain well. Sprinkle with a dash of salt and mix in sesame oil. Mix well. Cut cucumber and ham into long thin strips. Mix with cool noodles.

Mix ingredients for sauce. Place cool noodles on a large plate and pour sauce over them. Mix again before serving.
