ANYTHING OMELET 
2 eggs
1 tbsp. milk or cream
Salt and pepper
1 tbsp. butter
Cooked bacon
Cheese, grated

Beat eggs until fluffy. Beat in milk, salt and pepper. Pour in sizzling butter in skillet over low heat. Cook slowly, keeping heat low.

As under surface becomes set, lift slightly with spatula and sprinkle in pieces of cookie bacon and cheese. When cheese becomes soft, lift and fold in half with spatula, let cook slowly until done.

Substitutes for bacon and cheese can be ham, tomato, chipped beef, mushrooms, green peppers and onions.
