CHEESE SOUFFLE (DOESN'T FAIL 
3 tbsp. minute tapioca
1 tsp. salt
1 c. milk
1 c. grated cheese
3 egg yolks, beaten until thick, lemon color
3 egg whites, stiffly beaten

Combine tapioca, salt and milk in double boiler. Bring to scalding point (3 to 5 minutes). Cook 5 minutes, stirring often. Add cheese, stir until melted. Cool slightly. Add egg yolks and mix well. fold in egg whites. Turn in greased casserole. Place in pan of hot water. Bake at 350 degrees for 50 minutes. Serves 4. Does not fall. Stays tender and moist.
