SPINACH BREAD 
1 (10 oz.) pkg. frozen chopped spinach
1 med. onion
1/2 c. butter
2 tbsp. flour
1 c. milk
1 c. sour cream
2 beaten eggs
1/4 tsp. salt
1 (8 1/2 oz.) pkg. corn muffin mix
1/2 c. sharp shredded cheese

Chop onion and saute in butter until soft. Sprinkle in flour and stir. Add milk and stir until thickened.

Cook and drain spinach. Mix onion, spinach, eggs, sour cream, salt and muffin mix. Bake in casserole 350 degrees 30 to 35 minutes. Sprinkle on 1/2 cup cheese and bake until melted. Serve hot or warm.
