PUMPKIN BARS 
2 c. flour
2 c. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tbsp. pumpkin pie spice
3/4 c. oil
4 eggs
2 c. pumpkin (16 oz. can) or fresh

Stir together the dry ingredients in large bowl. Add the pumpkin, oil, and eggs. Mix until smooth. Spread batter evenly into greased 10 x 15 x 1 inch jelly roll pan. Bake at 350 degrees for 20-25 minutes. Cool and spread with following icing.

FLUFFY CREAM CHEESE FROSTING:

3 oz. pkg. soft cream cheese
6 tbsp. butter, soft
1 tsp. milk
1 tsp. vanilla
1 1/2 to 2 c. powdered sugar
1/4 c. chopped nuts (optional)

Beat together in small bowl cream cheese, butter, milk, and vanilla. Blend in powdered sugar and beat until smooth and fluffy. Spread over cooled bars. Top with chopped nuts if desired. These bars freeze well.
