PORK CHOPS WITH SCALLOPED
POTATOES
 
3 tbsp. butter
1 tbsp. flour
1 can chicken broth (14 1/2 oz.)
4 to 6 pork chops
2 tbsp. oil
6 c. thinly sliced potatoes
1 onion, sliced
salt
pepper
paprika

In a pan, melt butter. Stir in flour, salt and pepper. Add chicken broth. Cook until mixture thickens and boils; boil 1 minute. Brown pork chops in oil. Set oven at 350°F.

In a greased 13 x 9-inch baking dish, layer potatoes and onions. Pour broth over potatoes. Place pork chops on top. Cover and bake 1 hour. Uncover and bake 15 to 30 minutes or until done.
