LEMONY PIE WITH BROWN SUGAR
MERINGUE
 
LEMONY PIE:

1 tbsp. flour
1 1/2 c. granulated sugar
2 tsp. grated lemon rind
1 tbsp. cornmeal
4 lg. eggs
1/3 c. milk
1/4 c. butter, melted
1/4 c. lemon juice
1 (9 inch) unbaked pie crust, chilled

Combine flour, sugar, rind and cornmeal. Add eggs, milk, butter and juice; beat thoroughly. Put into prepared shell, bake in preheated 350 degree oven for 25 to 30 minutes, or until set. Remove from oven to rack.

BROWN SUGAR MERINGUE:

2 egg whites, room temperature
1 tbsp. lemon juice
1/2 c. light brown sugar
Diced lemon peel for garnish

Raise oven temperature to 400 degrees. Beat whites until foamy and doubled in volume; beat in lemon juice. Beat in sugar, 1/2 tablespoons at a time until stiff peaks form; mixture will be thick and glossy. Spread on hot pie. Bake in 400 degree oven for 8 minutes, until golden brown. Remove to rack and cool.
