FRESH VEGETABLE MARINADE | |
1 sm. head cauliflower 1 (1 lb.) bunch broccoli 1/2 lb. fresh mushrooms, sliced 2 med. sized green peppers, chopped 1 sm. red onion, thinly sliced and separated into rings 1 c. vegetable oil 1/2 c. white wine vinegar 1/2 c. sugar 1 tbsp. dried Italian seasoning 2 tsp. dry mustard 1 tsp. salt 2 carrots, thinly sliced Remove outer green leaves of cauliflower and break into flowerettes; wash thoroughly. Set aside. Trim off large green leaves of broccoli. Remove stalks; separate into flowerettes and wash thoroughly. Reserve stalks for use in other recipes. Combine vegetables in a large mixing bowl. Combine remaining ingredients; mix well and pour over vegetables, tossing gently. Cover and chill at least 3 hours, 24 hours for best results. |
