FLAN 
8 eggs
2 cans evaporated milk
2 tbsp. vanilla
1 3/4 c. sugar (1 c. sugar for syrup)

Melt 1 cup sugar over low flame (stir frequently). While sugar is melting beat eggs, add milk, sugar (3/4 cup) and vanilla. Coat pan with syrup, then pour in mixture. Place pan in larger pan with 1/2 inch water. Bake at 350 degrees for 1 hour or until silver knife comes out clean.
