CHEESE MEATLOAF 
2 beaten eggs
3/4 c. milk
1/2 c. fine dry bread crumbs
1/2 c. finely chopped onion
2 tbsp. snipped parsley
1 tsp. salt
1/2 tsp. ground sage
1/8 tsp. pepper
1 1/2 lb. ground beef
1/4 c. catsup
2 tbsp. brown sugar
1 tsp. dry mustard
1 (16 oz.) pkg. Velveeta slices

In bowl, combine the eggs and milk; stir in bread crumbs, onion, parsley, salt, sage and pepper. Add the ground beef. Thoroughly mix meat and seasonings. Divide meat mixture in halves.

Using half the meat mixture, fill the bottom of a 13 x 9 x 2 inch baking pan. Next line top of meat mixture with Velveeta cheese slices, leaving 1 inch around all sides of the pan. Layer cheese 2 slices thick. Top cheese layer with other half of meat mixture, covering it completely, including the 1 inch left on all sides. This seals the cheese in. Bake at 350 degrees for 50 minutes. Spoon off drippings and fat.

To Glaze: Combine catsup, brown sugar and dry mustard; spread over top an bake 10 more minutes. Makes 6 servings.
