BANANA CAKE (BREAD) 
1/2 c. shortening
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 c. mashed banana or a little more
1/4 c. sour milk

Cream shortening and sugar gradually. Add eggs and vanilla and beat well. Sift flour with baking powder, soda and salt. Add alternately with banana and milk to creamed mixture. Pour into 2 greased 8 1/2 x 4 1/2 x 2 5/8 inch pans and bake in preheated oven at 375 degrees for 25-30 minutes.
