BAKED TUNA & NOODLES 
1 tbsp. butter
1/4 c. finely chopped onion
1/4 c. finely chopped green pepper
1 can (4 oz.) mushrooms, drained
2 (7 oz.) cans white tuna (drain & flake)
1 med. tomato, chopped
1 tbsp. lemon juice
1/4 tsp. salt
1/8 tsp. pepper
3/4 c. mayonnaise
8 oz. cooked noodles
1/2 c. shredded Cheddar cheese

In small skillet, melt butter over medium heat. Saute onion, green pepper and mushrooms, stirring frequently, about 5 minutes.

Stir together with next 6 ingredients. Add noodles, mixing well. Turn into greased 2 quart casserole. Top with cheese and bake uncovered at 400 degrees for 20 minutes or until heated and cheese is melted.
