OAT BRAN PANCAKES 
1 1/3 c. flour
2/3 c. oat bran
3 tbsp. brown sugar
2 beaten eggs
1 3/4 c. buttermilk
2 tbsp. oil
1 tbsp. baking powder
1/2 tsp. baking soda

In medium bowl mix flour, oat bran, sugar, baking powder, and baking soda.

In small bowl combine egg, milk and oil, mix into dry ingredients.

Cook pancakes on lightly greased griddle.

I made these and they were very fluffy and tender. I did tweak the recipe by adding and omitting a few ingredients. I omitted baking soda and used 1/2 teaspoon of sea salt. I omitted buttermilk and used 2 cups of 1% low-fat milk. I also used 1 1/2 cups of unbleached flour and 12 cup of oat bran. I omitted the oil all together. Didn't feel it needed it. I didn't want a rubbery texture. I'm an experienced scratch cook so I made this recipe my own style. I had finicky eaters so I aimed for a more traditional style pancakes. They all gobbled them up.

My kids LOVE these. I've been using this recipes for a few years now and it's always been a hit. I use pretend buttermilk (milk and vinegar) because you can't get buttermilk in NZ.
