BANANA MUFFINS | |
2 to 2 1/2 ripe bananas, mashed 1 egg, slightly beaten 1/3 c. oil 2 tbsp. honey 1/2 tsp. vanilla 1 1/2 tbsp. water 1 1/3 c. whole wheat pastry flour 2 tsp. baking powder 1/4 tsp. nutmeg Mix mashed bananas with beaten egg, oil, honey, vanilla, and water. In another bowl, combine dry ingredients. Make a well in the center and pour in wet mixture all at once. Stir just until moistened, batter should be lumpy. Fill greased tins 2/3 full. Bake at 350 degrees for 30-35 minutes. A light, moist muffin. A dab of frosting makes instant cupcakes. |
