CHERRY UPSIDE-DOWN CAKE 
2/3 c. sugar
2 1/2 tbsp. cornstarch
1 (#2) can cherries
1/3 c. shortening
1/2 c. sugar
1 egg
1/2 c. all bran
1 tsp. grated orange rind
1 3/4 c. flour
1/2 tsp. salt
2 tsp. baking powder
1/4 tsp. baking soda
1/2 c. orange juice
1/4 c. milk

Can use 1 can thickened cherries and omit cornstarch.

Cook sugar, cornstarch, and cherries (with juice) until clear and slightly thick. Cream together shortening and sugar; beat in egg. Add remaining ingredients; mix well.

Pour cherry mixture on bottom of 13 x 9 pan. Pour cake mixture on top. Bake 40 minutes at 350-375 degrees. Serve warm or cold. (Top with whipped cream if desired.)
