CHERRY UPSIDE DOWN CAKE 
CAKE:

2 c. sifted cake flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. soft shortening (butter)
1 c. sugar
1 1/4 tsp. vanilla
2 eggs, unbeaten
3/4 c. milk
1 can (20 oz.) cherry filling or topping
Whipped cream

Grease 13 x 9 x 2 inch baking pan. Sift first 3 ingredients together. Cream shortening, sugar and vanilla together on medium speed scraping sides and bottom of bowl with rubber spatula. Add eggs, 1 at a time, beating well after each addition; beat until fluffy. Turn to low speed, add dry ingredients in fourths alternately with milk in thirds, beginning and ending with dry ingredients. Beat until smooth after each addition, scraping down bowl. Beat 1 minute or until blended. Turn into greased pan.

Spread gently with 1 can cherry filling. Bake at 350 degrees for 45 minutes or until done.

Cool, cut into squares. Serve cherry side up with whipped cream.
