ITALIAN RICE SALAD 
2 c. rice
2 pkg. Italian Good Seasons dressing
1/2 c. Parmesan cheese
1 tomato
1 green pepper
2 scallions
1 sm. can black olives
1/4 lb. Romaine lettuce

Do early in the day. Cook 2 cups rice according to directions on box. Let it cool and then mix with 1 bottle of dressing. Let marinate.

Right before serving - cut up tomatoes, green pepper, scallions, black olives and Romaine lettuce. Sprinkle Parmesan cheese. Mix another package of dressing - toss together. Salt and pepper to taste. Sprinkle cheese over top.
