TANYA'S BEEF-VEGETABLE LASAGNA 
1 lb. ground beef
1 sm. can sliced olives
1 sm. can mushrooms
1/2 lb. Jack cheese
1/2 onion, chopped
2 tsp. Italian herbs
1/2 lb. Cheddar cheese
1 zucchini
1-2 c. loosely torn spinach
1 pkg. lasagna noodles
2 sm. cans tomato sauce

Brown ground beef, drain fat. Add onion, then add tomato sauce and spices. Add noodles to boiling water.

Meanwhile, slice zucchini, grate cheeses, and prepare all other ingredients. Butter a casserole pan and alternately layer noodles, sprinkle cheese on top. Cook at 350 degrees for approximately 30 minutes. Check to make sure cheese isn't burning.
