FRUIT POUND CAKE | |
2 1/2 c. cake flour or 1 3/4 c. regular flour 1 c. sugar 2 tsp. baking powder 1 tsp. salt 1/2 c. shortening (half butter) 1 tsp. rum flavoring 5 egg yolks (3/8 c.) unbeaten 3/4 c. milk 2 cans pineapple 1 jar cherries, candied GLAZE: 1 c. sugar 1/2 c. water 1 tsp. rum Blend dry ingredients. Add milk 1/2 at a time. If using cake flour, all at once with regular flour. Beat 2 minutes and then 2 minutes more. Add fruit. Bake 60 to 70 minutes in 9 x 5 x 3 pan at 350 degrees. |
