LEMON-HERB CHICKEN 
2 tbsp. parsley
1 tsp. tarragon
2 tbsp. lemon juice
Carrots
Potatoes
1 tbsp. chopped onion
1/4 tsp. salt
3 1/2 lb. roasting chicken

Brush the chicken with herbs, inside and out. Put in a crock pot and surround with carrots and potatoes. Cook on low for 5 to 6 hours.
