LEMON-HERB DRESSING 
1 tbsp. honey
5 tbsp. fresh lemon juice
3 tbsp. apple cider vinegar
1 sm. clove garlic, crushed in a press
Dried basil and oregano
Fresh cayenne pepper, no salt
2/3 c. safflower or very mild olive oil

Pour honey into the bottom of a medium sized jar. Add the lemon juice and vinegar and stir until honey is dissolved. Add the seasonings and the oil, cap the jar, and shake well until all ingredients are blended.

To use fresh herbs: substitute 2 medium sized fresh basil leaves, finely chopped for the dried basil. In place of dried oregano, add two large sprigs (about 1 1/2 inches long) summer savory, finely minced. Add two tablespoons chopped chives. Make fresh herb dressing about an hour ahead so that flavors may blend. Fresh herbs are preferred for all cooking needs.
