FILLED ANISE COOKIES | |
COOKIES: 3 eggs 1/2 c. sugar 1/2 c. melted Crisco 2 c. flour 2 tsp. baking powder 2 tbsp. anise extract FILLING: 1 lb. pitted prunes 1 tbsp. honey 2 tbsp. chopped fruit cocktail 1/4 c. chocolate chips 1/2 c. chopped walnuts Beat eggs, sugar and melted Crisco. Add dry ingredients and anise extract; roll out dough to a 10 x 12 inch rectangle. Cook filling ingredients except walnuts, until thickened; spread filling on dough rectangle to about 2 inches away from edges. Sprinkle walnuts over filling. Roll like jelly roll and bake at 375 degrees for 15 to 20 minutes. When cool, cut into 1/2 inch diagonal slices. |
