BROCCOLI OMELET SUPREME 
3 tbsp. butter
1 c. finely chopped onions
1 tsp. minced garlic
1 1/2 c. chopped, cooked ham
2 c. broccoli florets, coarsely chopped
1 c. finely chopped cooked elbow macaroni
6 eggs
1/2 c. Parmesan cheese
1 tsp. salt
1/2 tsp. black pepper

In a heavy 10 inch skillet, heat butter. Add onions and saute for 5 minutes. Add garlic and ham. Cook and stir for 3 minutes. Stir in broccoli and macaroni. Toss until well coated, then remove from heat. In a large bowl, whisk the eggs until frothy. Add the broccoli mixture, Parmesan cheese, salt and pepper. Mix well. Pour into an 8 x 10 inch casserole dish. Cook for 30 minutes at 375 degrees.
