RUSSIAN CHICKEN 
1 (18 oz.) jar apricot preserves
1 (8 oz.) bottle of Russian salad dressing
1 env. dry onion soup mix
2 1/2 to 3 lbs. chicken

In a 5 quart pan combine the apricot preserves, Russian dressing, and onion soup mix. Stir well and bring to a boil (medium heat). Add uncooked chicken. Bring to a boil again and then reduce heat and simmer for 30 to 40 minutes until chicken is tender. You can serve with rice, using the sauce as a gravy.
