QUICK QUICHE 
1 (10 inch) prebaked pie crust
1/2 lb. bacon, cut up
1 sm. onion, minced
8 oz. grated Swiss cheese
3 eggs, plus 1 egg yolk beaten until light
1 1/2 c. cream
1/4 tsp. salt
Dash red pepper
Dash white pepper
1/2 tsp. nutmeg

Saute bacon and onion. Drain. Grate cheese. Layer bacon-onion mixture and cheese into pie crust. Mix remaining ingredients together and pour over filling in crust. Bake at 375 degrees for 35 minutes or until set. Let cool 15 minutes before serving. Serves 6. Serves 12 as hors d'oeuvre. Easy, fast and fool proof!
