CARROT DELIGHT SALAD 
3 c. carrots (cooked & diced)
1/4 c. green pepper (chopped)
1/2 c. celery (chopped)
1/4 c. onion (chopped)
2 tbsp. sugar
2 tbsp. cider vinegar
2 tbsp. Hellman's mayonnaise
1 tsp. horseradish

Prepare vegetables and mix together. Let cool.

Combine sugar, mayonnaise, horseradish and vinegar.

Pour over cooled vegetables and toss. Refrigerate until serving.

Serves 8.
