OLD-FASHIONED STRAWBERRY
SHORTCAKE
 
2 c. flour
1 tbsp. sugar
3 tsp. baking powder
1/2 tsp. salt
6 tbsp. butter
1 beaten egg
2/3 c. milk, scant
3 to 4 c. sugared, sliced strawberries
Light cream or milk

Sift together dry ingredients; cut in butter until mixture resembles coarse crumbs. Combine egg and milk; add all at once to dry ingredients, stirring only to moisten. Turn dough out on floured surface; knead gently about 30 seconds. Pat or roll to 1/2 inch thickness; with floured 2 1/2 inch cutter, cut out 6 biscuits. Bake on ungreased baking sheet at 425 degrees about 10 minutes. Split shortcakes; butter bottom layers or cover with strawberries. Top with strawberries. Serve warm with milk or cream. Makes 6 servings.

Similar to baking powder biscuits, but shortening and extra sugar add flavor and richness.
