MOM'S SWEET ROLLS (CHRISTMAS ROLLS) | |
I can remember my Mom making these since I was a very young girl (I'm now 73). 3 cups milk 3/4 cup sugar 1 tbsp. salt 3/4 cup (1 1/2 sticks) butter, melted 6 eggs, beaten 3 pkgs. yeast (or equivalent) 9 to 10 cups all-purpose flour FILLING (FOR EACH ROLL): 1/2 cup brown sugar 2 tsp. cinnamon 1 cup nuts 1 cup raisins, dried cranberries or dried apples Scald milk, sugar, salt and melted butter. Pour into large bowl, cool to lukewarm. Add yeast and stir until dissolved. Add beaten eggs. Sift in flour, a little at a time. Add enough flour to make a workable dough. Note: Flour amount varies on the size of the eggs. DO NOT KNEAD. Cover bowl with clean towel. Let rise until double. Roll out part of the dough at a time (about a 12x7-inch strip). This will make 4 to 6 rolls. Spread filling mixture on roll (I brush a little melded butter on roll before I add filling mixture). Roll jelly roll style, place on greased cookie sheet, shape into a wreath and tuck in ends to form a circle. Cut slits in top every 3 to 4 inches, Pull apart a little and twist to show some of the filling. Cover with towel and let rise until doubled. Bake in preheated oven at 350°F for about 20 minutes or until light brown. Let cool and glaze with confectioners' sugar, vanilla and a small amount of water. Makes 4 to 6 rolls.
