BEEF CASSEROLE 
2 lb. lean ground beef
1 c. diced celery
1/4 c. diced green pepper
1/2 c. chopped onion
2 (16 oz.) cans tomatoes
1 (8 oz.) can mushroom pieces, drained
1 (8 oz.) can sliced water chestnuts, drained
1 c. cubed American cheese
1/2 c. green olives, chopped
1/2 tsp. salt
1/4 tsp. pepper
6 oz. egg noodles, uncooked
2 c. shredded cheddar cheese

Brown beef in large skillet. Drain off any grease. Add celery, green pepper, onion, and saute. Add tomatoes with juice. Add remaining ingredients, except cheese. Simmer 20 minutes, then pour into a 9 x 13 inch dish or large casserole. Spread cheddar cheese on top and bake at 350 degrees for 20-30 minutes. Serves 12.
