CHICKEN OR TURKEY SALAD 
1 1/2 c. diced cooked chicken and/or turkey
1 green pepper, diced
1 med. onion, diced
3 stalks celery, diced
1 lg. carrot, grated
1 c. pears, cooked
3 c. cooked macaroni or rice
3/4 c. low-fat reduced calorie dressing or mayonnaise

Combine cooked meat, rice, or macaroni, green pepper, onion, celery, carrots, peas in a large bowl.

Toss with mayonnaise or salad dressing. Serve salad. Garnish with hard cooked eggs and tomato wedges and crackers.
