CAULIFLOWER-BROCCOLI CASSEROLE 
1 head cauliflower or broccoli
2 eggs, beaten
3/4 c. milk
1/2 c. shredded sharp cheddar cheese
3 tbsp. melted butter
3 tbsp. chopped fresh parsley or 1/2 tbsp. dry
1/2 tsp. instant onion
1/2 tsp. salt; optional
1/8 tsp. pepper
1/2 c. buttered bread crumbs

Cut cauliflower or broccoli into small pieces. Steam for 7-8 minutes. Drain well. Place in casserole. Combine next 8 ingredients and pour over vegetable. Top with buttered bread crumbs. Bake at 350 degrees for 30 minutes or until custard is done.

Cauliflower and broccoli may be mixed. May also mix ahead of time and keep in refrigerator until time to bake.
