ORANGE PRALINE YAMS 
4 lbs. yams or 2 (4 oz.) cans yams, drained, peeled & quartered
2/3 c. orange juice
5 tbsp. brandy
4 tbsp. butter, melted
1/3 c. brown sugar
1 tbsp. grated orange rind
2 tsp. salt
Ground black pepper
3 egg yolks
1 tsp. ground ginger

TOPPING:

1 c. pecans, chopped
2/3 c. brown sugar
1/2 c. butter, melted
1 tsp. ground cinnamon

Boil yams 25 to 30 minutes. Drain and cut into thick slices. Preheat oven to 350 degrees. In bowl of an electric mixer, beat yams until smooth, 2 minutes at medium speed. Add remaining ingredients and beat 1 minute. Spoon into buttered dish.

To make topping, stir together thoroughly all of topping ingredients. Spread evenly over the yams. Bake for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. Serves 12.
