TACO RICE SKILLET 
1 lb. ground beef
1 onion, chopped
1 (16 oz.) can of tomatoes
1 c. UNCLE BEN'S® rice
1 pkg. (1 1/4 oz.) taco seasoning mix
1 c. shredded cheddar cheese
2 c. shredded lettuce
1 sm. can chopped or sliced ripe olives, optional

Brown beef with onion in large pan or skillet; drain fat. Drain and cut up tomatoes, reserve juice. Add water to reserved juice to make 2 1/2 cup liquid. Add tomatoes, tomato liquid, rice and taco seasoning to beef in skillet; stir. Bring to boil, reduce heat, cover and simmer until liquid is absorbed and rice is cooked, about 25 minutes. Stir occasionally during cooking. Add olives near end of cooking time. Top with cheese and lettuce to serve. Mixture can also be used as a filling for flour tortillas.
