LEMON-COCONUT BARS 
1 1/2 c. flour
1/2 c. confectioners sugar
3/4 c. cold butter
4 eggs, slightly beaten
1 1/2 c. granulated sugar
1 tsp. baking powder
1/2 c. lemon juice
3/4 c. flaked coconut

In medium bowl, combine flour and confectioners sugar, cut in butter until crumbly. Press into bottom of lightly buttered 9 x 13 inch baking pan; bake at 350°F for 15 minutes. In a large bowl, mix eggs, granulated sugar, baking powder and lemon juice. Pour over crust, top with coconut.

Bake 20 minutes or until golden brown. Cool, cut into bars and store in refrigerator.

Lemon bars - omit coconut. Add 3 level tablespoons flour to egg mixture, proceed as above.
