CARROT, ORANGE, PINEAPPLE SALAD 
1 (3 oz.) pkg. lemon sugar free Jello
1 c. hot water
1 c. pineapple juice
1 tsp. orange rind
1 (20 oz.) can crushed pineapple in natural juice, no sugar
1 c. grated carrot

Dissolve gelatin in the hot water; drain the pineapple. If it doesn't make a cup of juice, add more pineapple and orange juice. When slightly set, add the orange rind, crushed pineapple and grated carrot and return to refrigerator.
