KATHY'S ZIPPY ZUCCHINI PIE 
1 can crescent rolls (or pie crust)
3/4 c. cashews or other nuts, chopped
3 med. zucchini
3 tbsp. butter
1/2 c. chopped onion
1 clove garlic mashed
1/4 tsp. dill weed
1/4 tsp. pepper
3 eggs, beaten
1 c. cubed Jack cheese
Sprinkle garlic powder
Parsley (optional)

Press crescent rolls or pie pan and press together. Sprinkle with nuts. Slice zucchini 1/8 inch thick and saute in butter with seasonings. Spoon into crust. Pour on beaten eggs. Top with cheese. Bake at 325 degrees for 40 minutes until golden brown.
