SWEET POTATO DEEP-DISH PIE 
3 or 4 med. sweet potatoes, peeled and thinly sliced
Water

Your favorite biscuit dough recipe, made with 1 cup flour and soft consistency.

Place sweet potatoes in a 2 quart saucepan. Cover with water and cook until tender. Peel potatoes and slice. Place in 8 inch square baking dish. Spoon biscuit dough over top. Bake in a 425 degree oven 10 to 15 minutes. Pour hot sauce over biscuit dough and let stand until sauce soaks in. 8 servings.

SAUCE:

3 c. milk
1/4 tsp. ginger
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. sugar

Combine ingredients in a saucepan and simmer until sugar is melted.
