OATMEAL PANCAKES 
2 c. milk
1 1/2 c. quick oats
1 c. flour
2 1/2 tbsp. sugar
2 1/2 tsp. baking powder
1 tsp. salt
2 eggs, beaten
1/3 c. oil
Fresh or frozen fruit, blueberries, raspberries, etc.

Pour milk over oats and set for 5 minutes. Sift dry ingredients into a bowl. Stir in soaked oats, eggs and oil. Bake on lightly greased griddle and sprinkle berries on top as they cook. Makes 5 giant pancakes or 12 small ones.
