OATMEAL PANCAKES 
2 c. milk
1 1/2 c. oatmeal
1 c. flour
2 1/2 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
2 eggs, beaten
1/3 c. oil

Pour milk over oats and let stand 5 minutes. Sift next 4 ingredients onto squares of waxed paper. Stir eggs into oatmeal mixture. Add dry ingredients and stir in oil.

Bake on hot, lightly greased griddle until golden brown, turning once. Makes 10-12 pancakes.

I cut the recipe in half and used only a rounded teaspoon of coconut oil, but it came out delicious! My toddler ate a whole pancake, which is not typical for her.
