APPLE BROCCOLI AND PEPPERS WITH
BASIL VINAIGRETTE
 
2 med. (about 1 lb.) Newton Pippin apples, cored and sliced
2 c. cooked broccoli florets
1 ea. medium red and yellow sweet pepper, seeded and cut into bite- sized pieces
2 green onions, diagonally sliced
Basil Apple Vinaigrette

Combine all ingredients; toss to mix.

BASIL APPLE VINAIGRETTE

Combine 2 tablespoons each olive oil and apple juice, 1 tablespoon vinegar, 2 teaspoons chopped fresh basil or 1/2 teaspoon crushed dried basil, and 1 small clove minced garlic; mix well. Makes about 1/4 cup. One tablespoon prepared Pesto can be substituted for basil and garlic in vinaigrette.
