SQUASH FRITTERS | |
2 c. finely chopped yellow squash 1 c. finely chopped onion 1 beaten egg 1 tsp. salt 1 tsp. pepper 3/4 tsp. sweet basil 1/2 c. plus 1 tbsp. all-purpose flour Combine first 6 ingredients; mix well. Stir in flour. Fill skillet with vegetable oil to depth of 1/2 inch. Heat over medium heat. Drop batter by tablespoons into oil. Cook until brown, turning once. Serves 6. |
