NANCY'S CREATIVE CHICKEN 
4 chicken breast halves, skinned & boned
3 chicken bouillon cubes
1/4 c. water
1/2 sm. onion, chopped
1/4 tsp. garlic powder
1 pkg. Normandy Mix vegetables (broccoli, cauliflower, carrots)
2 c. hot cooked rice, unsalted

Cut chicken into 1 inch pieces. Cook in a skillet on medium heat, stirring often, until meat looks white. Add chopped onion, water, bouillon cubes and garlic powder. Reduce heat and simmer until chicken is cooked. Pour in frozen vegetables. Cover and simmer until vegetables are soft. Serve over hot rice. Total cooking time is approximately 30 minutes.
