ZUCCHINI OR CARROT MUFFINS 
2 1/2 c. flour
1 1/2 c. sugar
1 tbsp. baking soda
1 tsp. salt
1/2 c. chopped nuts
2 tsp. cinnamon
4 eggs
3 med. zucchini (4 c. shredded or carrot equivalent)
2/3 c. oil

Grease muffin pans, beat eggs, mix in zucchini, nuts and oil. Mix dry ingredients. Put all together. Batter will be lumpy. Bake at 400 degrees for 20 to 25 minutes.
