CARROT MUFFINS 
2 eggs
1 c. white sugar
2/3 c. oil
1/2 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 1/2 c. flour
1 c. grated carrots
1/2 c. crushed pineapple

Beat eggs, then mix ingredients in order given. Bake in greased muffin tins or paper baking cups in muffin tins at 325 degrees for 25 minutes.
