CHEESY CARROTS 
2 lbs. carrots, sliced
1 stick butter
4 oz. Velveeta cheese
1 pkg. Ritz crackers

Cook carrots, until almost done. Drain and put in baking dish. Melt butter and cheese. Pour over carrots and cover top with cracker crumbs. Bake at 350 degrees until cheese is bubbly and crackers are golden brown. (This is a good way to cook potatoes also.)
