CHICKEN SALTIMBOCCA 
6 slices thin chicken cutlets
6 slices boiled ham
6 slices Mozzarella
1 med. tomato, seeded and chopped
1/3 c. fine bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. parsley
4 tbsp. butter, melted

Pound cutlet thin. Place a ham slice, then cheese on each cutlet. Top with some chopped tomato. Tuck in sides; roll up and press to seal well. Combine bread crumbs, Parmesan and parsley. Dip chicken in butter, then roll in crumbs. Place in shallow baking pan. Bake 350 degree oven 40 to 45 minutes. Serves 6.
