CHICKEN SALTIMBOCCA 
3 lg. chicken breasts, skinned, boned and halved
6 thin slices boiled ham
6 slices Mozzarella cheese
1 med. tomato, seeded and chopped
1/2 tsp. dried sage
1/3 c. dry crumbs (Italian style)
2 tbsp. grated Parmesan cheese
4 tbsp. melted butter

Pound chicken lightly to 4x6 inches. Place ham and cheese on each. Mix tomato and sage; place some on top of each chicken. Tuck in sides; roll up; press to seal. Dip in butter. Roll in mixture of bread crumbs and Parmesan cheese. Bake at 350 degrees for 40-45 minutes. Serves 6.
