LOW CHOLESTEROL CHICKEN MONTARDE 
2 1/2 lb. chicken breasts, skin off & deboned
3/4 c. bread crumbs
1/4 tsp. thyme
1/4 c. low fat yogurt
2 tbsp. low fat mayonnaise
2 tbsp. Dijon mustard
1 1/2 tbsp. minced scallions
1/4 tsp. paprika
1/8 tsp. pepper

Mix bread crumbs, thyme, pepper and paprika. Mix in separate bowl the yogurt, mayonnaise, mustard and scallions. Dip chicken breasts into mixture and then roll it in the crumbs and seasonings last. Spray a 13"x9" pan with Pam and bake in 375 degree oven for 45 minutes. Spoon sauce from bottom of pan over chicken breasts.
