CHICKEN AND HAM ROLL-UPS 
3 lg. chicken breasts, skinned, boned and split
6 thin slices boiled ham
3 slices Mozzarella cheese, halved
1 med. tomato, seeded and chopped
1/2 tsp. dried sage, crushed
1/3 c. fine dry bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. snipped parsley
4 tbsp. butter, melted

Place chicken, bone side up, on cutting board. Place a piece of clear plastic wrap over. Working from the center out, pound lightly with meat mallet to 5 x 5 inches. Remove wrap. Place a ham slice, half slice cheese and top with tomato and dash of sage. Tuck in sides. Roll up jelly roll style, pressing to seal well.

Combine bread crumbs, Parmesan and parsley in bowl. Dip chicken in melted butter, then roll in crumbs. Stick toothpick in to hold together. Place in shallow baking pan and bake for 40 to 45 minutes in a 350 degree oven. Serves 6.
