MICROWAVE PEANUT BUTTER FUDGE 
3 c. sugar
3/4 c. butter
1 (5 oz.) can evaporated milk
1 (7 oz.) jar marshmallow cream
1 (12 oz.) jar peanut butter
1 tsp. vanilla

Mix together sugar, butter and evaporated milk in 3-quart glass casserole. Microwave, uncovered, on full power 5 1/2 to 6 1/2 minutes or until mixture comes to a boil. Stir once or twice during cooking period.

Microwave, uncovered, on full power 3 more minutes, stirring occasionally to prevent it from boiling over. Remove from oven and stir in marshmallow cream. Beat about 30 seconds. Stir in peanut butter and vanilla. Mix well.

Pour into buttered 9x13 pan. Refrigerate until chilled. Cut into squares. Makes about 3 pounds. Can be frozen or store in refrigerator.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This recipe is great for smooth, delicious PB fudge! Love it. I microwave for 4 minutes, stir, microwave again for 4 min. and stir again, and then microwave for another 3 minutes before adding the final ingredients and spreading it in the pan. One of my favorites!
